Ingredients
  

  • 4 tablespoons tablespoons unsalted butter, softened
  • 1/3 cup cup brown sugar packed
  • 1 1/2 tablespoons tablespoons all-purpose flour
  • 2 1/2 teaspoons teaspoons ground cinnamon
  • 1 cup cup unsalted butter, softened but cool
  • 1 1/3 cups cups granulated sugar
  • 1 3/4 teaspoons teaspoons pure vanilla extract
  • 1 large large egg
  • 1 large large egg yolk
  • 2 3/4 cups cups all-purpose flour
  • 3/4 teaspoon teaspoons baking powder
  • 1 teaspoon teaspoons cornstarch
  • 1/4 teaspoon teaspoons salt

Method
 

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. Combine the cinnamon sugar filling ingredients and freeze for 10 minutes.
  3. Beat the butter and sugar until light and creamy. Add vanilla, egg, and egg yolk, mixing until combined.
  4. Whisk together the flour, baking powder, cornstarch, and salt. Gradually add to the wet ingredients and mix until combined.
  5. Layer the dough with the cinnamon mixture, then gently fold to create swirls.
  6. Scoop dough balls, freeze for 10 minutes, then bake for 10-12 minutes until golden.

Notes

Freezing the dough balls before baking helps retain their shape and results in a better texture.
