Fudgy Chewy Browkies (Brookies)

A delicious combination of brownies and cookies, these brookies offer a fudgy and chewy texture with a crackly top.

Ingredients
  

Dry Ingredients
  • 95 g plain flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 85 g dark or milk chocolate chips
Wet Ingredients
  • 225 g dark chocolate chopped
  • 56 g butter salted or unsalted
  • 2 eggs eggs room temperature
  • 100 g caster or granulated sugar
  • 90 g Demerara or raw sugar *see notes
  • 1 teaspoon vanilla
Other
  • sea salt for sprinkling (optional)

Method
 

  1. Preheat the oven to 160°C (320°F) with a fan or 170°C (338°F) for conventional heating. Line a baking tray with parchment paper.
  2. Melt the chopped dark chocolate and butter in a double boiler. Stir until smooth, then stir in the vanilla extract.
  3. Whip the caster sugar, Demerara sugar, and eggs using an electric whisk until light, thick, and fluffy, about 5 minutes.
  4. Sift together the flour, cocoa powder, baking powder, and salt. Add the chocolate chips and mix well.
  5. Fold the melted chocolate mixture into the whipped egg mixture. Gently fold in the dry ingredients until just combined.
  6. Scoop tablespoon-sized portions of batter onto the prepared tray, spacing them well. Bake for 12-14 minutes. Sprinkle with sea salt immediately after baking, then cool on the tray for 10 minutes before transferring to a cooling rack.

Notes

For the best flavor, use high-quality dark chocolate. Let the brookies cool slightly on the tray before transferring to a cooling rack to maintain their texture.
