- Preheat the oven to 160°C (320°F) with a fan or 170°C (338°F) for conventional heating. Line a baking tray with parchment paper.
- Melt the chopped dark chocolate and butter in a double boiler. Stir until smooth, then stir in the vanilla extract.
- Whip the caster sugar, Demerara sugar, and eggs using an electric whisk until light, thick, and fluffy, about 5 minutes.
- Sift together the flour, cocoa powder, baking powder, and salt. Add the chocolate chips and mix well.
- Fold the melted chocolate mixture into the whipped egg mixture. Gently fold in the dry ingredients until just combined.
- Scoop tablespoon-sized portions of batter onto the prepared tray, spacing them well. Bake for 12-14 minutes. Sprinkle with sea salt immediately after baking, then cool on the tray for 10 minutes before transferring to a cooling rack.

For the best flavor, use high-quality dark chocolate. Let the brookies cool slightly on the tray before transferring to a cooling rack to maintain their texture.
