Ingredients
  

  • 1 medium head cabbage
  • 1 large onion
  • 3 medium carrots
  • 2 stalks celery
  • 1 bell pepper bell pepper (if using)
  • 1 tablespoon olive oil
  • 3 cloves garlic
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon ground turmeric
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (if using)
  • Salt to taste
  • Fresh parsley or cilantro

Method
 

  1. Heat olive oil in a large soup pot or Dutch oven over medium heat. Add chopped onion and cook until softened.
  2. Add minced garlic and cook for 30 seconds until fragrant. Add diced carrots, celery, and bell pepper, cooking until they begin to soften.
  3. Add chopped cabbage and diced tomatoes with their juice. Stir well to combine.
  4. Add turmeric, cumin, black pepper, and cayenne pepper. Pour in vegetable broth and bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15-20 minutes until cabbage is tender. Taste and adjust seasoning.
  6. Ladle into bowls and garnish with fresh parsley or cilantro.
